POACHED EGG
















1 egg
20 g ham
10 g spinach (lettuce)
5 g butter

Bring a water with a drop of vinegar to a simmer (approximately 85-90C). Stir the water to create whirlpool and gently tip the egg in the middle and cook approximately 5 minutes until the white egg is set. Spread the butter on the bread, add some lettuce, ham (whatever you like) and pour the sauce on the egg.


Herb sauce
1 tablespoon mayonnaise
1 tablespoon yogurt
5 g herbs (parsley, coriander)
1 tablespoon lime juice
salt

Spicy mayo
2 tablespoons mayonnaise
1 teaspoon sriracha
1 teaspoon chipotle
½ teaspoon chilli flakes
1 tablespoon lime juice
Salt
Pepper
