Fragrant Dumpling Soup



Broth:
1000 g chicken frames, meat
1 carrot
1 clean onion with skin
1 clove garlic
2 pieces star anise
3 pieces cloves
1 stick cinnamon
1 tablespoon coriander seeds
1 teaspoon pepper
1 stem spring onion
2 tablespoon soy sauce

Put spices (pepper, cinnamon, anise, cloves, and coriander) on dry pan and roast for a while to highlight flavors of the spices. Bring 2 liters of water to a simmer, add chicken frames, meat, carrot and onion, and roasted spices, and cook under the boiling point for 2 hours. Pour the broth in other pot, add julienne carrot, cabbage, and finely cut spring onion and cook for few minutes. Flavour with soy sauce and salt, add dumplings and season with coriander.
